Today I have the honor to present you the second post within this event. 🙂 I have tasty and fruity Easter cupcakes for you. The recipe actually is very simple, but as regards taste and optical an indulgence! My colleagues loved to confirm this, when I brought them the cupcakes. 😉

In my family we don’t really have some Easter traditions. But at least one dinner with Mum and Dad is required. 🙂 This year my parents want to make a Whisky tasting with us. I really wonder how it will be, because I’m (at least currently) not a Whisky type and hardly can taste a difference. 😀

For the dough
  1. 145 g soft butter
  2. 145 g sugar
  3. 3 eggs
  4. 160 g flour
  5. 4 g baking powder
  6. a pinch of salt
  7. about 60 g fresh raspberries
  8. about 60 g fresh blueberries
For the frosting
  1. 3 cups Cremè double
  2. 2 tbsps powdered sugar
  3. 1-2 dashes ‚Likör 43’
  4. a grated tonka bean
For the decoration
  1. Milka chocolate eggs
  2. chocolate
For the dough
  1. Preheat oven to 170 °C/340 °F and line a muffin pan with cupcake liners.
  2. Mix butter with sugar until you have a smooth mass. Stir in the eggs. Add the flour together with baking powder and salt. Mix until you have a smooth dough.
  3. Carefully fold in the fruits.
  4. Divide the batter between the cupcake liners and place them in the oven for 20-25 minutes or until a tooth pick inserted in the center comes out clean. Let them cool completely.
For the frosting
  1. Whisk the Cremè double and powdered sugar until stiff. Stir in the liqueur and the grated tonka bean.
  2. Fill the frosting into an icing bag and evenly divide it between the muffins.
For the decoration
  1. Grate the chocolate with a sharp knife into long graters and place them on the cupcake so that they look like a small nest.
  2. Now place 2-3 Milka chocolate eggs on top.

    Die Osternester sehen richtig süß aus. Und das Rezept hört sich total lecker an – fruchtig ist immer gut 🙂
    Mal schauen, ob meine Großeltern wieder zu Ostern einladen. Eventuell werde ich dann den Nusszopf machen, da dieser nach einem Rezept meiner Oma ist und sie sich immer total freut, wenn ich etwas aus ihrem Rezeptbuch backe und sich davon dann auch Bilder ausdrucken lässt 😀 🙂
