Recipe for Lemon Lamington Cake

 

On a dreary Sunday afternoon I sat on my sofa and while I was sorting old photos I got wanderlust. It’s already seven years ago since I was alone in Australia. It was one of my dreams which I fulfilled myself for my 25. birthday. I spent stunning 25 days there and I often think back to this amazing time. I’m really happy to be Baking Avenue’s guest today and I reinterpreted a typical Australian pastry.

Ingredients

For the Lemon Curd

  • 4 lemons
  • 240 g sugar
  • 120 g butter
  • 3 eggs

For the dough

  • 340 g flour
  • 1 tsp baking powder
  • 340 g butter (room temperature)
  • 240 g sugar
  • 6 eggs
  • 2 tbsps milk
  • grated peel of a lemon
  • 100 g shredded coconut

For the filling

  • 6-8 tbsps Lemon Curd
  • 300 g cream cheese
  • 250 ml whipping cream

For the decoration

  • 4-6 tbsps Lemon Curd
  • shredded coconut

Instructions

For the Lemon Curd

  1. Swill down the lemons with hot water and grate the peel. Juice the lemons.

  2. Boil up the juice with sugar, butter, eggs and the greated peel while stiring with a whisk, until you get a creamy mass. You need a little patience, it took about 10-15 minutes when I made the curd. 

  3. When the cream is ready, fill it into glasses as long it is still hot and seal air-tight. Let them cool and store them in the fridge. 

  4. Lemon Curd is good for 2 weeks when you store it air-tight and in the fridge. Lemon Curd also is perfect for cake fillings or I like to refine creams with it.

For the dough

  1. Preheat oven to 180 °C/350 °F. 

  2. Froth up soft butter and sugar until it’s creamy. Add the eggs bit by bit and stir them in. Sift flour and baking powder and gradually add. Stir in lemon peel, milk and shredded coconut and beat the dough until everything is smooth and creamy. 

  3. I baked three cake bases directly, but of course you can also bake one big cake and cut it into three bases after baking. Cover the bottom of a springform pan (ø 23 cm) with parchment paper and grease the sides. 

  4. Bake until it’s golden for 25 minutes or until a toothpick inserted comes out clean. Let the cake cool, remove from the pan and then let it cool completely.

For the filling

  1. Froth up cream cheese and Lemon Curd until it’s creamy. Whisk stiff the whipping cream and fold it in. 

  2. Spread the cream evenly onto the first cake base. Place the second on top and spread cream on it again. The third base is the top. 

  3. When all layers are piled up, use a pastry scraper to spread the outside of the cake thin with cream. Place the cake into the fridge for 1 hour.

For the decoration

  1. For decoration spread some of the lemon curd onto the top and the sides thinly and afterwards sprinkle it with shredded coconut.
