Little Sunday bliss with chocolate!

Finally the weather gets better, so that I can write my post while sitting on my balcony instead of my sofa – my personal Sunday bliss. Indeed 20 degress would be totally enough for my, but of course next week will be a little warmer than that. 😉 Fortunately I only have a three-day week ahead of me, whereby I can enjoy the weather this time!

Sunday bliss

But we don’t have to think about work yet. Anyway it’s Sunday and we can be totally relaxed. The weekend Mr. J. and me spent in Düsseldorf and so today is all about doing nothing. The posts about Düsseldorf will follow.

Today I show you, how you can create your own little Sunday bliss. Maybe you have all necessary ingredients at home, so that you can start immediately. Otherwise: The next Sunday comes for sure. 😉 This muffins really taste very good. aren’t especially elaborate and when I brought them to work they were gone so quick and were the highlight of the day.

Bananas and me – a love-hate

You know it. I don’t like bananas. Except for baking. Or as yogurt. Or as a shake. Just bananas as such I really don’t like. But as they work perfectly with chocolate they belong to the ingredients of today’s recipe. I found the original recipe at Chelsea from Chelsea’s Messy Apron.

I hope, you enjoy your Sunday! Whatever you’re doing today. 🙂

Do you like using bananas for baking? 🙂

  • 1 tsp cornstarch
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 100 g chocolate chips
  • 4 tbsp unsweetened cocoa
  • 1 egg
  • 115 g Greek Yogurt
  • 60 ml melted coconut oil
  • 1 tsp vanilla extract
  • 85 g brauner Zucker
  • 2-3 very ripe bananas

  1. Preheat oven to 180°C/350°F, grease the muffin pan and dust the cavities with cocoa powder.

  2. Remove a 1 tablespoon of the flour and set aside. Put the remaining flour in a small bowl and mix with cornstarch, baking soda, salt, cocoa and chocolate chips.

  3. Peel the bananas and mash the bananas with a fork, until now bigger chunks are left.

  4. In another bowl mix the egg with the yogurt. Now add the slightly cooled, melted coconut oil, vanilla extract, brown sugar and bananas and mix it.

  5. Now add the dry to the wet ingredients and mix everything until just combined.

  6. Seperate the batter evenly among the 12 cavities and place them in the oven for about 20 minutes. Let them cool completely, before you remove them from the pan.
