Spring is coming!

Spring is coming! Finally the weather is better again and the sun comes out more often. Spring is, besides Winter, my favorite season. Everything begins to bloom, the birds start to tweet again (even though it disturbs my sleep in the morning every year anew :D) and all in all most people are in a much better mood.

Heralds of spring

On Sunday Mr. J. and me went on our first bike ride this year. But I had to note that my bike isn’t whipped into shape yet. But Mr. J. will take care about it the next weeks. He even varnish it in mint for me! <3 I already bought a new bike bell in Netherlands, with flowers on it.

Aside from that we rewarded ourselves for the bike ride with a tasty ice cream cone, and for the first time I ate pomegranate ice cream. And what can I say: It was just lovely! Afterwards we want on a rag-fair where I bought two new things for my blog photos for only 3€.

Cake which tastes like spring

But so that you don’t have to enjoy the sun only when you’re outside but also on your plate at home I have a good recipe for you. I found this recipe at Belinda’s blog verzuckert. A lovely combination of coconut and lime! The sun literally tingles on your tongue!

Recipe for Coconut Lime Cake



Coconut Lime Cake

Vorbereitungszeit 15 minutes
Zubereitungszeit 1 hour
Arbeitszeit 1 hour 15 minutes
Portionen 1 cake


For the cake

  • 200 g soft butter
  • 300 g sugar
  • 1 pack vanilla sugar
  • 6 eggs (size M)
  • pinch of salt
  • 380 g flour
  • 2 tsp baking powder
  • 200 ml coconut milk
  • 1 lime
  • 60 g shredded coconut

For the icing

  • 1 lime
  • 100 g icing sugar


  1. Preheat the oven to 180°C/350 °F, grease the pan (30 x 10 cm loaf pan) and dredge it with flour.

  2. Beat the butter in a bowl until it’s creamy and then mix it with sugar and vanilla sugar. Add eggs and salt and mix it.

  3. Mix flour and baking powder and add it together with coconut milk, shredded coconut and the juice of one lime to the dough and mix until you have a smooth dough. 

  4. Fill the dough into the pan and place in the oven for 50-60 minutes. After baking let it cool for a few minutes in the pan and then remove the cake from the pan and let it cool completely on a wire rack.

  5. Mix icing sugar with the juice of the second lime until you have the consistence you want and glaze the cake with it.
