I could try the one or other treat there and for the one or other I could organize myself the recipes! Today I show you something, which totally blew me away because it’s so unbelievable tasty, even though it’s so simple.

Namely Lamingtons! Actually an Australian cake, but which also enjoys great popularity in New Zealand. The classic variant is covered with chocolate icing. But there are also some with strawberry or raspberry icing.

The making takes a while, but it’s worth it! So damn tasty, I could scoff all 16 pieces by myself. 😀

For the dough
  1. 6 eggs
  2. 150 g caster sugar
  3. 50 g cornstarch
  4. 75 g plain flour
  5. 50 g self-raising flour
  6. 160 g desiccated coconut
For the icing
  1. 640 g icing sugar
  2. 50 g cocoa powder
  3. 15 g butter, melted
  4. 250 ml milk
Instructions
  1. Preheat oven to 180 °C/350 °F. Grease a 20cm x 30cm baking pan and line with parchment paper. Extending paper 5cm over the long sides.
  2. Beat eggs in a large bowl for about 10 minutes. Gradually add sugar. Sift the flour three times and fold in into the mass. Pour the dough into the pan.
  3. Bake cake for about 35 minutes. Turn immediately onto a wire rack to cool.
  4. In the meantime you can make the icing. Sift icing sugar and cocoa into a medium heatproof bowl and stir in butter and milk. Set bowl over medium saucepan of simmering water (don’t allow water to touch the base of the bowl) and stir until icing is of a coating consistency.
  5. When the cake is cooled cut cake into 16 squares. Dip each square in icing and drain off excess. Toss each square in coconut and place on a wire rack to set.
