Cinnamon rolls, but different!

3 months. This is the time which my colleagues have to do without me. 3 whole months off work. What a luxury!

I can really feel blessed. Currently my life proceeds just the way I want it to, my employer supports me with my time abroad, I found a new love and anyway. I’m so thankful for all the possibilities I already had this year.

Today in one week I’m on my way to the airport in Frankfurt. And from there off to Brisbane. I’m so extremly excited and eager what the time in Australia and New Zealand holds for me. During my absence every week on Wednesday at 10 am I have a new blog post for you with awesome guests. A look would be worth it. 🙂

But of course my colleagues didn’t get nothing. For my leave I baked some tasty stuff fort hem. Two different sorts of muffins and the Oreo Cheesecake which is already on the blog. Today you get the first muffin recipe. You definitely have to try it, this muffins are so damn tasty!

For the muffin
  1. 280 g flour
  2. 3 tsp baking powder
  3. ½ tsp salt
  4. 50 g sugar
  5. 3 tbsp melted butter, cooled slightly
  6. 1 egg
  7. 225 ml milk (plus more as needed)
Topping and filling
  1. 170 g brown sugar
  2. 3 tsp grounded cinnamon
  3. 3 tbsp melted butter
  1. 60 g cream cheese
  2. 140 g powdered sugar
  3. 1 tbsp milk
  4. dash of vanilla
  1. Preheat oven to 200 °C/400 °F. Generously grease a standard 12 cup muffin tin or use muffin liners.
  2. In a large bowl, sift together the dry ingredients. In a separate bowl, whisk together the wet ingredients until well combined. Make a well in the center of the flour mixture and add the egg mixture, stirring only until just combined.
  3. Combine all the topping/filling ingredients. Gently fold half of the mixture into the muffin batter.
  4. Evenly spoon the muffin batter into each muffin tin. Top with remaining brown sugar mixture. Bake for 12 to 15 minutes. Remove from oven. Cool slightly, then transfer carefully to a wire rack.
  5. Whisk together all of the frosting ingredients. Drizzle over the top of the muffins.

    Hui, die sehen ja mal wirklich verführerisch aus! Ich mag Zimtgebäcke eh total gerne. Ich habs mir gleich mal abgespeichert und muss definitiv bald mal wieder backen.
