It’s so much going on again in my life that I barely have time for my blog. I know, I still owe you the last Chicago post. Shame on me.

But instead you get at least a recipe for a fantastic cake today and I can tell you, there are some quite cool things going on in the background of Baking Avenue. 🙂

A friend of mine asked for a cake, because she doesn’t have the time herself. It should be something with strawberries, because her husband loves strawberries. So the recipe of the wonderful Lena from Ma vie est délicieuse was just perfect.

Strawberry Almond Cake

For the dough
  1. • 4 eggs
  2. • 1 pinch of salt
  3. • 65 g soft butter
  4. • 150 g cane sugar
  5. • 1 tsp vanilla sugar
  6. • 130 ml milk
  7. • 60 g ground almonds
  8. • 170 g fine spelt flour
  9. • ½ tsp baking powder
For the cream
  1. • 300 g mascarpone
  2. • 50 g powdered sugar
  3. • 2 tsp vanilla sugar
  4. • 300 ml cream
  5. • 300 g fresh strawberries
  6. • 3-4 tbsp strawberry jam
Instructions
  1. Separate the eggs. Beat up the butter with sugar and vanilla sugar. Stir in the egg yolk one at a time. Add some of the milk and mix everything. Mix flour with baking powder and almonds and stir it in by turns with the milk. Now whisk stiff the egg white with the salt and carefully fold it in. Divide the batter evenly into two greased pans. If you only have one pan just bake in turn. Place it in the oven at 180 °C/350 °F for about 30 minutes. Reduce temperature to 170 °C/340°F and bake further 10 minutes. Take it out of the oven and let the pans cool for about 10 minutes. Then remove the pan and let them cool completely on a wire rack.
  2. Put the mascarpone in a bowl and stir it with powdered sugar and vanilla sugar. Whisk stiff the cream and fold it into the mascarpone. Maybe you have to cut the cakes into shape on top so that you have an even surface. Now halve both cakes horizontal. Cut the strawberries into slices. Spread about 1 tbsp strawberry jam onto the first flan case and spread 3-4 tbsp cream onto it. Garnish it with strawberries. Place the next cake base on top and repeat the procedure two times.
  3. Spread some of the cream on top and on the sides and place it for 15 minutes in the fridge. Afterwards cover it with another cream layer. For the hald-naked look place a palette knife on the side and slightly scrape off the side until you can the cake bases. Now you can decorate the cake as you like with. Best with fresh strawberries and/or flowers. Place in the fridge until serving.

    Wieder sehr lecker sieht der Kuchen aus.
    Oft hat man einfach viel um die Ohren und kommt weniger zum Bloggen, was aber nichts macht. Läuft niemand weg. Bin gespannt was hier im Hintergrund so alles gewerkelt wird
