Do you already know the tip to dust fruits with flour so they don’t sink to the bottom of the cake? Maybe you should try it here as well. All of my Toffifee bits sank to the bottom. Maybe it works here too. 🙂

For the dough
  1. • 115 g butter
  2. • 60 g dark chocolate
  3. • 42 g cocoa
  4. • 94 g flour
  5. • ½ tsp baking soda
  6. • ¾ tsp baking powder
  7. • ¼ tsp salt
  8. • 2 eggs
  9. • 100 g caster sugar
  10. • 50 g brown sugar
  11. • 1 tsp vanilla extract
  12. • 120 ml buttermilk
  13. • 15 Toffifee (1 pack)
For the cream
  1. • about 315 g Crème double (2 ½ cups)
  2. • 125 g whole milk chocolate
  3. • 1-2 tbsp icing sugar
  4. • 12 Toffifee
  1. Melt butter and chocolate in a pan and let it cool.
  2. Preheat the oven to 180 °C/350 °F. In a bowl mix cocoa, flour, baking soda, baking powder and salt and set aside. In another bowl whisk eggs, both sorts of sugar and vanilla extract until everything is combined. Now add the cooled butter-chocolate mix and stir it in.
  3. Now add half of the buttermilk and half of the flour-mix, mix until combined and add the other halves and mix until just combined. Roughly chop the Toffifee, dust them with flour and fold them into the batter.
  4. Divide the dough between your muffin pans and let them bake for 18 minutes. In the meantime you can already melt the whole milk chocolate because for the cream it should be cooled very good.
  5. After the baking process let the cupcakes cool on a wire rack. Now you can make the cream. Whisk stiff the Crème double until it has the consistency of whipped cream. Mix the cream with powdered sugar and slowly add the melted chocolate. Mix until combined. Now use an icing bag to put the cream onto the cupcakes. Put a Toffifee on top of each cupcake.

    Mhh das Rezept hört sich super an. Schade das deine Toffifees alle auf dem Boden gelandet sind. 🙁 Die Idee mit dem Mehl ist da ein super Tipp. 🙂

      Ja, das fand ich auch etwas schade…so hat der untere Teil der Cupcakes ziemlich am Boden geklebt durch das Karamell 😀
