Today again I had a real Lazy Sunday. And what could make a Lazy Sunday more better then something home-baked?

So I scoured my Pinterest board where I collect my inspirations and decided to make cookies. You can find my Pinterest board HERE. I didn’t make cookies for quite a long time! And this cookies I had on my To-Do-List for a really long time. Luckily I had all ingredients at home to bake this incredible moist and tasty cookies. The original recipe is from the blog Smart School House.

Cookies stuffed with Marshmallows. I just couldn’t resist any longer. 🙂 The cookies are super moist and for you little Chocoholics just perfect. And the combination is so divine! So, let’s go and try them! 🙂 

Marshmallow Chocolate Cookies

They taste really good when they’re still a little warm. 😉 But even when they’re cooled they are damn tasty and worth the sin!

Ingredients
  1. • 420 g flour
  2. • 84 g baking cocoa
  3. • ½ tsp baking soda
  4. • 200 g sugar
  5. • 170 g brown sugar
  6. • 225 g soft butter
  7. • 2 eggs
  8. • 2 tsp vanilla extract
  9. • 54-60 mini Marshmallows (3 each cookie)
Instructions
  1. Preheat the oven to 200 °C/400 °F and line a baking sheet with parchment paper.
  2. Place the mini marshmallows in the freezer. Keep them there until you need them for the batter. That’ll help that they don’t melt that fast in the oven.
  3. Mix flour, cocoa and soda in a bowl and set aside. In a new bowl mix both sorts of sugar, butter, eggs and vanilla extract until combined. Now stir in the flour mixture and blend it until the dough is very thick.
  4. Take a heaping tablespoon of dough, flatten it a little in your hand, place 3 marshmallows in it and cover it with the dough in your hand, so that you have a closed dough ball. Place 9 of the stuffed cookie balls on one sheet and place them for 8-10 minutes in the oven.
  5. Take them out and let them cool a little.
