We already reached the middle of June and today I show you my post for LOVE OF BAKING! And it’s a premiere for me because it’s the first time I baked vegan respectively took care about vegan ingredients.

The topic was vegan and/or Low Carb in fruity or savory. I decided to bake something vegan and fruity! 🙂 The fruity part is banana in my recipe.

I baked Banana Chocolate Breakfast Cookies for you! 🙂 Really tasty and a good base for your day.

Banana Chocolate Breakfast Cookies

Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes
Servings 10 cookies

Ingredients

  • 190 g quick oats
  • pinch of salt
  • 1 tsp ground cinnamon
  • 250 g almond or peanut butter
  • 80 g maple syrup or honey
  • 2 large ripe bananas mashed
  • 60 g vegan dark chocolate chopped

Instructions

  1. Preheat the oven to 170 °C/325 °F and cover a baking tray with parchment paper.

  2. Combine all ingredients into a bowl and mix them with a wooden spoon until you have a sticky dough.

  3. For one cookie you take 3 teaspoons of dough, put it on the baking tray and flatten it to a cookies. The cookies won’t spread in the oven so you can put them close to each other.

  4. Place them into the oven for 15 minutes until edges are slightly brown. Don’t bake them any longer because the cookies will taste dry. Cool on a wire rack.
